{Recipe} Cinnamon Cookie Crunch Popcorn

This popcorn is SO YUMMY!
Abbie even gobbled up some that we were giving away to some friends.
I adapted the recipe from Our Best Bites.

Asher and I made this for a date one night a couple of weeks ago...
While Matt took Abbie on a date to a Jazz basketball game.
We had so much fun together...
It was nice to have some Mommy/ Son time.

Asher got to use a his rolling pin that he got for his birthday to smash cookies,
He used my mallet to crush Red Hots,
And he got to use scissors to cut up the vinyl tablecloth we ruined with the mallet/red hots...
He had a good night:)

Cinnamon Cookie Crunch Popcorn

13 cups plain Popcorn, popped
1 package White Almond Bark minus 1 square, melted
1 cup Red Hots, crushed
1 bag Oreo Mini's, broken in to chunks not crumbs
1/2 teaspoon Cinnamon Oil
1/4 cup Semisweet Chocolate Chips, melted

Directions
Pop the popcorn on your stove top.
Melt the almond bark in a microwave safe bowl in 30 second intervals.
(It will melt faster if you cut the chocolate into smaller chunks.)
Once the almond bark is melted,
Stir in crushed Red Hots, broken Oreo crumbs, and cinnamon oil to desired taste.
Pour this mixture over the popcorn in a large bowl, constantly stirring, and gently folding for an even coat.
Once coated, spread the popcorn on two pieces of foil in an even layer.
While the popcorn hardens, melt the chocolate chips in 30 second intervals.
Drizzle with a fork on top of the popcorn.

Do NOT let any water get near this yummy project.
One drop of water will cause the chocolate/ almond bark to seize.
Also, overheating the chocolate/ almond bark can cause seizing, where it becomes grainy instead of smooth.
Using cinnamon extract instead of cinnamon oil can cause seizing as well, since it is water based.

This was easy, yummy, and one of my favorite flavor combos...
Chocolate and Cinnamon
